The Bushwacker is a cocktail invented in 1975 at the Ship’s Store, Sapphire Pub at Sapphire Village in St. Thomas, Virgin Islands. It was created by bartender Angie Conigliaro who was the cousin of Tony Conigliaro of the Boston Red Sox. The drink gained popularity throughout the Virgin Islands, eventually, a few bartenders from Florida who were on vacation decided to bring the drink stateside. Since 1986 there has been an annual Bushwacker Festival held at Quietwater Beach on Pensacola Beach, FL to celebrate the drink and its celebrity status.
- 1 oz Dark Rum
- 1 oz Coffee Liqueur
- 1 oz Dark Crème de Cacao Liqueur
- 2 oz Cream of Coconut
- 2 oz Milk
- Garnish: Cherry
Blend all the ingredients together in a blender with a cup of ice, and then strain into a hurricane glass. Place a cherry on top of the drink as a garnish and serve. Whipped cream can also be added as a garnish to the top of the drink before the cherry.
